NILITSONG MANOK SA SAHA


Ingredients:

1 (1.2 kg) pc whole MAGNOLIA CHICKEN
1 tsp iodized fine salt
1 tbsp ginger juice
1 stalk lemongrass (tanglad), tied into a knot
saha (outer layer of banana stalks)

Sauce

3 tbsp cooking oil
1/4 cup sugar
1/2 cup vinegar
1 cup chopped onions
1/4 tsp chopped garlic
5 stalks lemongrass (tanglad), julienned (white part only)
3 pc MAGNOLIA CHICKEN STATION LIVERS, parboiled then finely chopped
1/4 cup SAN MIGUEL PALE PILSEN
iodized fine salt to taste
pepper to taste

Procedure:

  1. Rub chicken with salt and ginger juice. Stuff cavity with tanglad and skewer. Wrap saha around chicken and secure with twine.
  2. Broil over hot charcoal until saha has wilted and chicken is cooked.
  3. To prepare sauce, melt sugar in a pan. Add vinegar and do not stir until mixture boils. Remove from heat and set aside.
  4. In another pan, sauté onions, garlic and lemon grass in oil. Add liver, sugar-vinegar mixture and beer. Season with salt and pepper. Simmer for 1 minute and then remove from heat. Strain sauce and then transfer to a bowl. Serve with chicken.

Makes 6 to 8 servings.
